Fruit Bliss Fig and Avocado Pudding

Recently, I was flipping through a magazine and came across a recipe for avocado pudding. Yes, you read right, avocado pudding. At first I thought, “No way.” But then I started to get a little intrigued. Avocado is creamy, I thought. And, it’s got a pretty light flavor that is versatile. Plus, we can all do with a little more avocado in our lives.

Avocado is a true super food. It has an abundance of vitamins, minerals, fiber, protein, and good fats. Plus, they are low in carbs, one element of my family’s diet that I am always trying to rein in. Plus avocados are easy to blend, so they might just make it possible to create a smooth, yet healthy alternative to chocolate pudding. I started to think that avocado pudding might just work, but would my family want bright green pudding? It was a risk I was willing to take.

I played around with the recipe, and I found that I loved the way the avocado paired with Fruit Bliss figs. When blended along with some milk, the pudding turned out sweet and creamy and healthy enough to eat any time of day. You can also use your favorite milk substitute if you are lactose intolerant or vegan. I liked it best with almond milk.

Then it was time for the family taste test. When I offered pudding to my husband and daughter for breakfast, my daughter’s eyes lit up while my husband looked at me like I was nuts. When I showed them the bowl of bright green pudding they both looked dubious. I told them to give the pudding a shot. They each took a small taste, and then another, and then another, until the pudding was gone.

My daughter told me the pudding was one of her favorite Fruit Bliss recipes. And I am sure she got a kick from telling her friends she had pudding for breakfast. Besides finding a way to give my family something super healthy and delicious to eat, the other great aspects of this dish were the short ingredient list – I almost always have all the ingredients on hand -- and the fast clean up.

Now that I know that avocados aren’t just for guacamole or as an add-on to sandwiches, I’m going to keep on working with this divine fruit to see what other creations I can find. Next up – I might swap out the figs for dates and give the pudding a chocolatey twist by adding cocoa powder. I will keep you posted on any and all delectable developments.

Ingredients

Makes 4 servings

Two ripe avocados

6 Fruit Bliss figs cut up

½ cup milk


Directions

Place figs and milk and blender and blend until smooth. Cut avocado into small pieces and place a few pieces at a time into blender. Continue until all avocado has been blended with figs and milk. Serve chilled.
