Everyone knows that chocolate and peanut butter go great together, and in these vegan plum tarts the outcome is no less than phenomenal. A rich center meets an earthy crust for an easy-as-pie, no-bake dessert. Great for after-school treats and guests alike.
For the Crust
1 5-oz package of Fruit Bliss Agen Plums
1 cup oatmeal
1/2 cup raisins/ nuts of choice
For the Filling
2 tablespoons cocoa powder
1/4 cup brown sugar
1/4 cup water
2 tablespoons Santa Cruz organic, no sugar added light roast peanut butter
Blend the Fruit Bliss Agen Plums, oatmeal, and raisins and/or nuts in a food processor. Mold mixture in cupcake baking sheet.
On medium heat mix the cocoa powder, sugar, and water until bubbles appear. Pour in tart crusts.
Microwave peanut butter for 30 seconds or until creamy. Pour into tarts.
Refrigerate for 1 or more hours.
