Moroccan Lentil & Chickpea Curry (Vegan/Vegetarian)
INGREDIENTS
- 1 cup lentils, rinsed
- 15 ounces garbanzo beans, drained & rinsed
- 3 1/2 cups low-sodium vegetable broth
- 2.5 ounces tomatoes, chopped
- 2.5 ounces, dates, chopped
- 1/2 tsp ginger
- 1/2 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/4 tsp cinnamon
- 1/4 tsp coriander
- 1/4 tsp nutmeg
- 1/4 tsp salt
DIRECTIONS
- Add all ingredients to the slow cooker.
- Stir to mix well.
